Anzac biscuits are an Aussie classic. You do not have to wait to celebrate our National Day of Remembrance. With this very easy recipe you can enjoy them anytime. On Anzac Day have an extra biscuit and salute our ANZACS.
1 1/4 cups plain flour, sifted.
1 cup rolled oats.
3/4 cup Skinny Sugar White (pink packet).
2/3 cup desiccated coconut.
150g unsalted butter, chopped.
2 tablespoons golden syrup.
1 1/2 teaspoons water.
1/2 teaspoon bicarb soda.
Step 1: Preheat oven to 170C. Place the flour, oats, Skinny Sugar and coconut in a large bowl and stir to combine.
Step 2: In a saucepan place the golden syrup and butter and stir over low heat until the butter has fully melted. Mix in the bicarb soda water and add it to the golden syrup mixture. Remove it from the heat while stirring all together. It will bubble slightly.
Step 3: Pour into all the other the dry ingredients and mix together until fully combined. Make small balls a tablespoon size of the mixture and place on baking trays lined with non stick baking paper, pressing down on the tops to flatten slightly.
Step 4: Bake for 12 minutes or until golden brown. Let cool completely before eating. Store in an airtight container or glass jar.
